House of Hyena teams up with J.P. Graziano Grocery Co., the West Loop Italian sub shop slinging sandwiches since 1937, for a spirit that bottles the soul of Chicago. Giardiniera Flavored Gin is made with real giardiniera, infused into a bold 92-proof gin that's briny, peppery, and herbaceous, with juniper giving way to pickled heat.

Sip it neat, build a Bloody Mary with backbone, or shake a dirty martini that bites back. Taste real Chicago, 750 ml at a time.

A Chicago twist on the dirty martini, built around the briny, peppery kick of House of Hyena x J.P. Graziano Giardiniera Gin.

INGREDIENTS

  • 2.5 oz House of Hyena Giardiniera Gin
  • 0.5 oz dry vermouth
  • 0.5 oz giardiniera brine (straight from the J.P. Graziano jar)
  • 1 dash celery bitters (optional, for extra snap)
  • Garnish: skewered giardiniera pickled vegetables — cauliflower, carrot, sport pepper, olive

METHOD

Add gin, vermouth, and giardiniera brine to a mixing glass filled with ice. Stir for 20 to 30 seconds until well chilled and properly diluted. Strain into a chilled coupe or martini glass. Garnish with a skewer of giardiniera vegetables resting across the rim.

NOTES

For a spicier pour, add an extra splash of brine or muddle a single sport pepper before stirring. Best served cold enough to fog the glass, with a side of crusty bread and a Graziano sub.
